Zucchini Bites Video

Our zucchini bites recipe is a great way to make vegetables a little tastier! If you struggle with getting your kids to eat green food, this is a great side to try with you next meal. You could even shape them like potato tots and dip them in ketchup. The video and written recipes are below. Let us know what you think in the comments!

Zucchini Bites Recipe

Ingredients:

  • 1 zucchini, grated and drained well

  • 1/3 cup breadcrumbs

  • 1/4 cup grated Parmesan cheese

  • 1 teaspoon garlic powder

  • 1/2 tablespoon dried parsley

  • 1/2 teaspoon dried basil

  • Salt and pepper, to taste

  • 1 egg

Directions:

  1. Preheat oven to 400 degrees. Lightly coat a baking sheet with non-stick cooking spray.

  2. Use a grater to grate the zucchini onto a clean towel. Sprinkle the grated zucchini with salt and set the towel or zucchini aside for later.

  3. In a mixing bowl, combine the rest of the ingredients—breadcrumbs, Parmesan, garlic powder, parsley, basil, salt and pepper, and 1 egg.

  4. Twist up the towel with the zucchini inside and wring out all the moisture. Squeeze out as much water as you can. This will help the bites get crispy in the oven.

  5. Add the zucchini to the mixing bowl. Mix everything to completely combine, using your hands at the end if needed to bring everything together.

  6. Use a small cookie scooper to scoop the zucchini mixture. Pat the scoops together with your hand if needed and release onto the prepared baking sheet. Repeat for the rest of the zucchini mixture.

  7. Bake for 15-18 minutes until the tops are golden brown.

  8. Serve with tomato sauce for dipping as a snack, appetizer, or side dish. Enjoy!
