Tex-Mex Stuffed Peppers Video

Let’s start with what Tex-Mex means. “Tex-Mex” is short for Texas-Mexican and describes a type of cuisine that is influenced by traditional Mexican food but has an American twist. Our stuffed peppers use many ingredients similar to Tex-Mex tacos—black beans, corn kernels, tomatoes, cheddar cheese, and taco spices. So, really, these are like healthy tacos, using a pepper in place of the tortilla. That swap also makes this recipe gluten-free on top of being vegetarian. Omitting the cheese will easily make this dish dairy-free and vegan as well. They’re also a great way to use leftover grains and veggies you have in your fridge.

Stuffed Peppers Recipe

Ingredients:

  • 3 bell peppers, cut in half, stemmed and seeded

  • 2 small tomatoes, diced

  • 1 (4-ounce) can green chiles

  • 1/3 cup canned black beans, drained and rinsed

  • 1/2 cup corn kernels, frozen or canned

  • 1.5 cups cooked quinoa, rice, or orzo

  • 1 teaspoon garlic powder 
1 teaspoon cumin

  • 1/2 teaspoon onion powder

  • 1/2 teaspoon chili powder, or more to taste

  • 1/2 teaspoon salt

  • 1/4 teaspoon ground black pepper

  • 1/4 cup crumbled feta cheese

  • 1/2 cup shredded cheddar cheese

Supplies:

  • Cutting board

  • Knife

  • Baking tray

  • Large mixing bowl

  • Can opener

  • Measuring cups and spoons

  • Strainer (optional)

  • Mixing spoon

 Directions:

  1. Preheat oven to 350 degrees.

  2. Cut bell peppers in half. Remove the stem, seeds, and white membrane from the inside. Place all pepper halves on the baking tray.

  3. Dice your tomatoes and add them to the mixing bowl.

  4. Open your can of chiles and pour the whole can into the bowl.

  5. Open your can of beans. Scoop beans into a 1/3 cup measuring cup until full. Then pour the 1/3 cup of beans into a strainer. Rinse under cold water.

  6. Measure 1/2 cup of corn and add it to the bowl.

  7. Measure 1 1/2 cups cooked quinoa and add it to the bowl.

  8. Add all the spice: 1 tsp garlic powder, 1 tsp cumin, 1/2 tsp onion powder, 1/2 tsp chili powder, 1/2 tsp salt, and 1/4 tsp ground black pepper.

  9. Add 1/4 cup feta and 1/2 cup shredded cheddar cheese.

  10. Mix everything together.

  11. Scoop the filling into each pepper half until full, packing down the filling as much as possible.

  12. Put the baking tray of stuffed peppers into the oven, and bake for 25-30 minutes.

  13. Use oven mitts to carefully remove cooked peppers from the oven. Let them cool for a few minutes, then eat and enjoy!
