Easy Breakfast Burrito

Reasons we love this breakfast burrito recipe:

  • It’s easy and fast. Ready in under 8 minutes, this burrito gets assembled right in the pan.

  • It’s adaptable. Add any fillings you want! Keep it vegetarian or use your favorite breakfast meat. Use any cheese or no cheese. Make it your own!

  • It can use up leftovers! If you have leftover veggies, cheese, or meat, throw it into this breakfast so they don’t go to waste.

Breakfast Burrito Recipe

Ingredients:

  • Butter or oil

  • 2-3 eggs

  • Salt and pepper

  • 1 large tortilla

  • Shredded cheese

  • Fillings (we used bacon but use any breakfast meat and/or veggies)

 Directions:

  1. Make sure all fillings are prepped ahead of time—cheese shredded, meat cooked, veggies chopped.

  2. Set a nonstick skillet on a stove burner over medium heat.

  3. Crack eggs into a small bowl and whisk.

  4. When skillet is heated, add butter or oil. Swirl around the pan.

  5. Add the eggs. Then season with salt and pepper.

  6. Top immediately with the tortilla, pressing down slightly to adhere to the eggs.

  7. Let the eggs continue to cook for a minute or two. They don’t need to be completely cooked before flipping but should be somewhat set. When eggs are set enough, use a spatula to flip the eggs and tortilla.

  8. Sprinkle shredded cheese over the eggs. Put a lid on the pan to help melt the cheese faster.

  9. When the cheese is melted, add your fillings to the middle of the eggs.

  10. Use the spatula to fold the burrito into thirds—fold one side over the fillings and press down, then fold the other side over the middle and press down. Use the spatula to remove the burrito to a plate.

  11. Cut in half, eat, and enjoy!
