Banana Peanut Butter Quesadillas

We created this great snack that kids, teens, and adults will enjoy, and that any ability can create independently. Since we know a lot of kids and especially kids with special needs struggle with picky eating due to sensory aversions, we created this in two different ways—one crunchy and one soft. Peanut Butter Banana Quesadillas Recipe (Soft)

Ingredients:

  • Bananas

  • Tortillas

  • Peanut butter

  • Hazelnut spread or melted chocolate chips

Kitchen supplies:

  • Cutting board

  • Knife

  • Spoons or butter knives

Directions:

  1. Slice bananas. (Use 1/2 banana per quesadilla you want to make. For example, if you want to make 2 quesadillas, slice 1 whole banana.)

  2. Scoop peanut butter onto tortilla and spread to cover the entire tortilla.

  3. Scoop hazelnut spread or melted chocolate onto tortilla and spread around.

  4. Place banana slices over half of the tortilla.

  5. Fold the empty half of the tortilla over the filling.

  6. Cut quesadillas in half. Then eat and enjoy!

 

Peanut Butter Banana Quesadillas Recipe (Crunchy)

Ingredients:

  • Bananas

  • Tortillas

  • Peanut butter

  • Chocolate chips

  • Peanuts*

*You could use crunchy peanut butter instead of smooth and omit the extra peanuts.

Kitchen supplies:

  • Cutting board

  • Knife

  • Spoon or butter knife

Directions:

  1. Slice bananas. (Use 1/2 banana per quesadilla you want to make. For example, if you want to make 2 quesadillas, slice 1 whole banana.)

  2. Scoop peanut butter onto tortilla and spread to cover the entire tortilla.

  3. Place banana slices over half of the tortilla.

  4. Sprinkle a small handful of chocolate chips and peanuts (if using) on top of the bananas.

  5. Fold the empty half of the tortilla over the filling.

  6. Cut quesadillas in half. Then eat!
