Pumpkin Pie Bites

Fall is here, which means pumpkin-flavored food and drinks are here. Not every pumpkin recipe has to be loaded with sugar though. This no-bake pumpkin pie bites recipe has natural sweetness from the raisins and pumpkin and tastes delicious. We love this for kids, not only because it is a deceivingly healthy snack, but also because they can make it! There’s no knives or heat needed. This recipe does require the use of a food processor so make sure to supervise or teach safety around the food processor blade. Other than that, it’s easy and fun (hands will get dirty) to make!

Pumpkin Pie Bites Recipe

 Ingredients:

  • 1 cup raisins

  • 1/2 cup pecans

  • 1/3 cup pumpkin puree

  • 1/4 cup coconut flakes

  • 2 teaspoons vanilla

  • 1/2 - 3/4 teaspoon cinnamon

  • 1/8 teaspoon nutmeg

  • 1/8 teaspoon ground cloves

Directions:

  1. Place raisins in a bowl and cover with hot water. Let them soak for 10 minutes (while doing step 2).

  2. Measure pumpkin puree, coconut flakes, vanilla, and spices (cinnamon, nutmeg, and cloves) into a medium mixing bowl. Set aside.

  3. Drain the water from the raisins. Add the raisins to the bowl of a food processor.

  4. Measure and add pecans to food processor with raisins. Pulse a few times until combined.

  5. Add the rest of the ingredients to the food processor. Pulse until combined. Scrape down the sides of the food processor with a spatula. Put the food processor on high for 30 seconds until fully combined.

  6. Remove food processor blade. Scrape the dough back into the medium bowl. Mix with the spatula.

  7. Use a cookie scoop or spoon to scoop a small amount of mixture into your hands. Then use your hands to roll the dough into a small ball. Repeat for all remaining dough. Refrigerate for 15-30 minutes before snacking (if you want).
