Zucchini Involtini

Everyone has different preferences, especially when it comes to food, which is why we love adaptable recipes. This one from Half Baked Harvest is definitely one of them!

Leave out the sausage for a great Meatless Monday dinner, or swap the spicy for sweet Italian sausage to make it more kid-friendly. Omit red pepper flakes as well to do the same. Or, if you’re cooking for someone who loves spice, just add more! Is pesto not your thing, or will green stuff in your kids’ cheese lead to a dinner-time struggle? Leave that too! You could even swap the zucchini ribbons for lasagna noodles if you really need to but trying it with the zucchini could also be a great way to get your lasagna-loving kid to try new things and eat more vegetables. You could also split the filling and make half of your involtini to your kids’ liking and make the other half a bit more adult-friendly.
